Mom's famous Peppermint Patties

 i’m homesick! what can i say?! every year around this time it’s the hardest. so what did i go and do? 

well, my friend Elizabeth did it this weekend too, so don’t put all the blame on me… i made my mom’s candy! 

it was my favorite as a little girl. i loved to help her make it. she grew up on a farm and i’d always pretend that we were back on the farm together and how romantic that would be… sigh. :) she’d let me roll the balls and put the fork in them… needless to say i’d make them as big as possible because they are just that yummy! now i know better, more lady like, or something like that… they’re very rich so they don’t have to be very big at all!  so to compromise the little girl in me, i make some big and some small… :) 

Recipe for my mom’s famous peppermint candy: 

all the ingredients you need!

  •  1/3 c. corn syrup.
  •  1/4 c. butter, softened.
  •  1 tsp. peppermint extract
  •  1/2 tsp. salt.
  •  1 lb. sifted powder sugar(about 4-3/4c),
  • red and green food coloring.

mmm. i could sniff this stuff all day...

combine corn syrup, butter, peppermint, salt. 

 

improvised sifting... give me a break! i don't have a sifter... poor college student, remember?

slowly add sugar- keep mixing, use hands at the end so it becomes dough like. 

slowly adding sugar... yum!

getting dirty!

 

divide into thirds, mix a couple of drops of red and green to a part and leave one white. 

hey! christmas colors! or italy's flag...

make small balls and flatten with a fork. 

smells like christmas to me!

and i feel like a little girl again!

let cool and dry for several hours!

 mmmm. i feel better. i still miss my family back in colorado and i don’t know when i’ll see them because we’re going to Seattle to see my in-laws this year. maybe i’ll have to make some more of these when we get there… :) 

and maybe i’ll need to make another batch so my husband can eat some when he gets home… ;) hee hee.
